Can you make a key lime mini desert that we could make ahead, freeze and then finish for a graduation party?

Something like key lime pie freezes really well and is a great make-ahead option. You can freeze it whole or in slices once it has fully set in the fridge. Wrap it tightly in plastic wrap and then foil, or store it in an airtight container to prevent freezer burn. When you’re ready to serve, thaw it overnight in the fridge. It holds its texture beautifully, especially the filling, but I recommend adding any whipped cream topping fresh after thawing for the best result. It's not a recipe I have on my blog at the moment but I may add it in the future.
