    My Top Tip

    Do not over-soak the ladyfingers when dipping them in the coffee mixture.

    While you want the sponge finger biscuits to absorb enough of the coffee flavor, if they sit too long in the liquid, they will become overly saturated and start to break apart.

    If the ladyfingers become too saturated, they will lose their structural integrity. Instead of providing a soft yet firm base for the whipped cream layers, overly soaked ladyfingers will turn into mushy, formless blobs.

    Overly wet ladyfingers can also cause excess liquid to seep out after assembly, creating a soupy mess at the bottom of your dessert.

    So for optimal flavor, texture and presentation, take care to briefly dip the ladyfingers rather than letting them soak. Just a quick in-and-out of the coffee is perfect for imparting great coffee taste while still maintaining their shape and structure.

    This Caramel Coffee Dessert Box balances sweetness, creaminess, and the awesome coffee taste perfectly. A luscious layered dessert with coffee-soaked ladyfingers and whipped caramel coffee cream. It's a real treat that will leave you wanting more after every bite.

    INGREDIENTS

    • 12 (12) ladyfingers or sponge finger biscuits
    • 240 ml (1 cups) water hot
    • 5 ml (1 teaspoon) instant coffee granules
    • 600 ml (2 ½ cups) heavy cream
    • 60 g (½ cups) powdered sugar
    • 2 (2) caramel latte instant coffee sachets or any flavor you like
    • 15 ml (1 tablespoon) chocolate powder or cocoa powder

    INSTRUCTIONS

    • Add the hot water and instant coffee granules to a heatproof bowl and mix well.
    • In a medium mixing bowl, add the heavy cream, powdered sugar, and coffee sachets, and mix well until stiff peaks form. Do not overmix as the mixture may split or curdle.
    • Trim the ladyfingers (sponge finger biscuits) to fit the serving container you have chosen. I have re-purposed a Ferrero Rocher container. I always keep empty containers to re-purpose and use for dessert boxes.
    • Dip the trimmed ladyfingers into the cooled coffee and lay them along the bottom of the box to form the first layer. You may need to trim down some extra ladyfingers to fill any gaps along the side of the dessert box.
    • Place the coffee whipped cream into a piping bag and pipe a layer of coffee cream on top of the ladyfingers.
    • Repeat the layering, alternating between ladyfingers and the coffee cream, finishing off with the coffee cream. Fill all the way to the top of the container.
    • Use an angled spatula or bench scraper to smooth off the top of the dessert box.
    • Use a piping bag fitted with a St. Honore tip and filled with the remaining coffee cream to pipe a diagonal zig-zag decorative pattern across the top of the dessert box.
    • Refrigerate and just before serving, generously dust the top of the dessert with chocolate powder or cocoa powder. Serve chilled.

    NOTES

    These can be made as individual mini desserts that serve one person or larger containers like I have used that serve 2-4 people.
    Adjust the amount of instant coffee granules to suit your desired coffee strength.
    Experiment with different flavors of instant coffee or cocoa powder for a unique twist.
    Serve the dessert boxes chilled for the best texture and flavor.
    Consider garnishing with shaved chocolate, caramel sauce, or a dusting of cinnamon for added visual appeal and flavor.
