Why I love these Cheese and Bacon Scones
These scones use simple ingredients you probably have on hand. Heavy cream adds rich flavor and a tender texture, while pan-fried bacon brings a bold, savory taste. Fresh chives give a light, herby lift. The process is quick, making them perfect for any meal or snack!
Why use cream for scones?
Heavy cream has a higher fat content, which gives your scones a richer taste. It creates a moist, tender crumb and works like a mix of milk and butter. Using cream simplifies your recipe since you only mix one ingredient instead of two. For great cheese and bacon scones, heavy cream is key to achieving the best texture and flavor.
Ingredients in Cheese and Bacon Scones
Self-Rising Flour: This is your main dry ingredient. It helps the scones rise without extra leavening agents.
Salt: Enhances the overall flavor, balancing the richness of the cheese and bacon without overpowering the scones.
Shredded Cheese (in dough): It blends into the dough, giving every bite a rich, melty flavor perfect for cheese and bacon scones.
Diced Bacon (in dough): Pan-fried bacon brings a savory, smoky depth throughout the scone.
Extra Diced Bacon (garnish): Sprinkled on top, it boosts the bacon flavor with every bite in cheese and bacon scones.
Chives, Chopped: They add a fresh, herbal note that brightens the overall taste. You can also use Spring Onions.
Heavy Cream: This ingredient creates a tender, moist texture with a rich flavor profile.
Sparkling Water: It lightens the dough, making your scones soft and airy.
Extra Shredded Cheese (garnish): Added on top before baking, it creates a delicious, cheesy finish.

How To Make Cheese and Bacon Scones
1️⃣ Preheat Oven. Set your oven to 400°F (200°C). This step readies the oven for even baking, essential for perfect cheese and bacon scones.
2️⃣ Prepare the Tray. Line a baking tray with parchment paper. This stops the scones from sticking and makes cleaning easier.
3️⃣ Cook Bacon. Cook diced bacon in a pan over medium heat until well done. Drain it on paper towels. Let it cool completely since well-cooked bacon enhances the flavor of cheese and bacon scones.
4️⃣ Mix Dry Ingredients. In a large bowl, combine self-rising flour, salt and shredded cheese. Then add the cooled bacon and chopped chives. Mix evenly.
5️⃣ Add Wet Ingredients. Slowly pour in heavy cream and sparkling water. Stir gently until a smooth dough forms.
6️⃣ Knead Lightly. Transfer the dough onto a floured counter. Knead briefly to blend the ingredients without overworking them.
7️⃣ Shape the Dough. Pat the dough to about 1 inch thick. This helps the scones bake uniformly.
8️⃣ Cut Scones. Use a floured cutter to shape your scones. Place them on the tray with space between each one.
9️⃣ Garnish. Sprinkle extra shredded cheese and extra bacon on top for more flavor in your cheese and bacon scones.
🔟 Bake. Place the tray in the oven and bake for about 20 minutes or until the scones turn light golden. Transfer the scones to a wire rack and let them cool for 5-10 minutes before serving warm.
Note: Using a large cutter, you'll get about 9 scones. A medium cutter will make around 12.

Fay's Top Tip
Handle your dough gently and mix only until the ingredients just come together. Overmixing can make the cheese and bacon scones dense.
