INGREDIENTS
Hummus
400g(2.44cups)chickpeas
1cup(1cup)tahini
2tablespoon(2tablespoon)lemon juice
2tablespoon(2tablespoon)olive oilextra virgin
½cup(0.5cup)watercold
1teaspoon(1teaspoon)salt
2(2)garlic cloves
Garnish
1tablespoon(1tablespoon)olive oil
1pinch(1pinch)paprikasmoked or hot
INSTRUCTIONS
Hummus
In a food processor or blender, add the rinsed chickpeas, tahini, lemon juice, olive oil, salt, and garlic.
Blend the ingredients until they start to combine. The mixture may be thick at this point.
With the food processor or blender running, slowly add cold water, one tablespoon at a time. Continue blending until the hummus reaches your desired consistency.
Taste the hummus and adjust the seasoning as needed. Add more tahini, lemon juice, or salt according to your preference.
Scoop into a serving bowl. Create a swirl design with your spatula. The olive oil will collect in the swirls.
Garnish
Drizzle extra olive oil over the top of the hummus for added richness.
Sprinkle with paprika for a touch of color and flavor.
Refrigerate until ready to serve.
NOTES
YES...I know 1 cup of Tahini is a LOT but it's how I like it! Adjust to your taste.You may or may not need the full ½ cup water. I like my Hummus on the thicker side and it will continue to thicken as it chills in the refrigerator.Every aspect of the recipe can be adjusted to your personal preference including which spices you would like to add.Garnish with additional toppings like chopped fresh parsley, pine nuts, or olives if desired.
