INGREDIENTS
Coffee Cheesecake Filling
250g(1cups)cream cheese
½cup(½cup)superfine sugaror caster sugar
1teaspoon(1teaspoon)vanilla
½cup(½cup)coffeecooled
300ml(1 ¼cups)heavy cream
Biscuit/Cookie Layer
15(15)tea biscuitsplain or chocolate
½cup(½cup)coffeecooled
Whipped Cream Topping
100ml(3/7cups)heavy cream
1teaspoon(1teaspoon)vanilla
1tablespoon(1tablespoon)powdered sugar
1tablespoon(1tablespoon)cocoa powder
INSTRUCTIONS
Prepare the Cream Cheese Mixture: In a medium bowl, combine cream cheese, sugar, and vanilla. Mix with a hand mixer until smooth, ensuring to scrape the sides and bottom of the bowl.
Add Coffee: While mixing, gradually add the cooled coffee to the cream cheese mixture until well combined.
Incorporate Heavy Cream: Add the heavy cream to the mixture. Continue mixing at medium speed until the texture thickens.
Layering the Biscuits: Line the base of your glass container or disposable dessert box with plain tea biscuits, trimming them to fit if necessary. Drizzle these biscuits with the cooled coffee using a squeeze bottle.
Create Layers: Fill an 18” piping bag with the coffee cream cheese filling. Pipe a layer over the biscuits. Alternate layers of coffee-soaked tea biscuits and the cream cheese mixture, ending with a cream cheese layer. Level the top using a bench scraper or angled spatula.
Chill: Refrigerate the dessert for several hours, or overnight, before serving.
Prepare Topping and Garnish: Whip the heavy cream, vanilla, and powdered sugar until stiff peaks form. Transfer to a 14” piping bag fitted with a St Honore Piping Tip. Pipe a row of whipped cream diagonally across the top of the dessert. Dust generously with cocoa powder.
Serve: Keep the dessert refrigerated until ready to serve.
