INGREDIENTS
Base
8(8)chocolate cookies
1tablespoon(1tablespoon)buttersoftened
Filling
1cup(1cup)chocolate malt balls
250g(1cups)cream cheese
½cup(½cup)sugarsuperfine
1teaspoon(1teaspoon)vanilla extractadjust to taste
300ml(1 ¼cups)heavy cream
Chocolate Ganache Sauce
150g(6/7cups)dark chocolate
100ml(3/7cups)heavy cream

INSTRUCTIONS
Base
Begin by processing the chocolate cookies in a food processor, or with a stick blender until they turn into fine crumbs. You can also place them in a zip lock bag and crush them with a wooden rolling pin.
Melt/soften butter and thoroughly mix it with the cookie crumbs.
Set aside.
Filling
Crush Maltesers (or Whoppers) into fine crumbs/powder using a stick blender or rolling pin.
In a large bowl, mix cream cheese with sugar until fully combined and smooth making sure the sugar is completely dissolved for a silky filling texture.
Add vanilla extract and whipping cream to the cream cheese mixture. Whip the mixture until it thickens to a creamy consistency.
Gently fold in the crushed Maltesers, ensuring they're evenly distributed throughout the filling.
Assembly
Place a layer of the prepared cookie crumb mixture at the bottom of each dessert cup, pressing down lightly.
Place filling in a piping bag, and pipe (or spoon) a layer of the cheesecake filling over the crumb base.
Next, add a layer of the chocolate ganache sauce over the cheesecake filling.
Repeat with another layer of the ganache sauce and cheesecake filling,
For the final touch, sprinkle each cup with crushed Maltesers and place a whole Malteser on top for decoration.
Serving
These mini dessert cups can be served immediately for a creamy texture or refrigerated for a few hours for a more set consistency. I like to refrigerate for a couple of hours to let the flavours blend.
Store any remaining ganache in the refrigerator for later use.
