INGREDIENTS
Crumb Base
8(8)chocolate cookies
1tablespoon(1tablespoon)butterunsalted and softened
Cheesecake Filling
160g(5 ⅔oz)Toblerone
250g(8 ⅚oz)cream cheese
½cup(½cup)sugar
1teaspoon(1teaspoon)vanilla extract
300ml(1 ¼cups)heavy cream

INSTRUCTIONS
Prepare the Crumb Mix:
Place chocolate cookies in the bowl of a stick blender and blend into fine crumbs. Alternatively, you can use a food processor or crush the cookies with a rolling pin inside a ziplock bag.
Add softened butter to the crumbs and blend again until fully incorporated. Set aside.
Make the Cheesecake Filling:
Break the Toblerone into pieces and place in a microwave-safe bowl. Microwave in 30-second intervals, stirring each time until melted. It's okay if small chunks of nougat remain.
Set the melted Toblerone aside for 5 minutes to cool slightly.
In a medium bowl, mix the cream cheese and sugar well with a hand mixer until smooth.
Add the vanilla extract to the cream cheese mixture and mix again to incorporate.
With the mixer running, gradually pour the whipping cream into the cream cheese mixture bowl. Mix well until fully incorporated and the mixture thickens.
Add the melted Toblerone to the cream cheese mixture and mix on medium speed until fully blended.
Assemble the Dessert Cups:
Divide the crumb mixture evenly between the mini dessert cups, pressing gently to form a base.
Place the cheesecake filling into a piping bag with a large plain piping tip. Pipe the filling into the cups over the base.
Garnish each cup with a sprinkle of cookie crumbs and two pieces of Toblerone chocolate. You can reduce it to one piece per cup if preferred.
Chill and Serve:
Refrigerate the dessert cups for at least 2 hours before serving to allow them to set.
