INGREDIENTS
10(10)Tim Tams
600ml(2 ½cups)heavy cream
395g(14oz)sweetened condensed milk
2tablespoon(2tablespoon)milk powderoptional
1teaspoon(1teaspoon)instant coffee granulesmore if you like
INSTRUCTIONS
Roughly chop the Tim Tam biscuits into small pieces. Reserve 2 tablespoons of the chopped biscuits for garnishing later.
In a large mixing bowl, combine the heavy cream, sweetened condensed milk, milk powder (if using), and instant coffee powder. The addition of milk powder helps to add creaminess and prevent ice crystals from forming.
Begin mixing the ingredients at medium speed, then gradually increase to high speed. Continue mixing until the mixture thickens and its volume increases by about one-third.
Fold the chopped Tim Tams into the mixture using a silicone spatula. Ensure the biscuits are evenly distributed throughout the ice cream mixture.
Pour the ice cream mixture into a silicone loaf pan. Use an angled spatula to smooth the surface so that it's level with the top of the pan.
Place the pan in the freezer for one hour. After one hour, take the pan out, cover it with cling wrap, and then return it to the freezer. Allow it to freeze overnight to ensure it's thoroughly set.
When you're ready to serve, remove the ice cream log from the freezer. Gently pull the sides of the silicone loaf pan away from the ice cream and fold them back to release the ice cream log.
Transfer the ice cream log onto a serving plate. Garnish the top of the log with the reserved chopped Tim Tams.
Allow the ice cream log to sit for about 10 minutes at room temperature to slightly soften. This makes slicing easier.
Use a sharp cake knife, warmed under hot water and dried, to cut the ice cream log into slices.

Ensure all ingredients, especially the heavy cream, are well-chilled before starting.
