300ml(1 ¼cups)heavy cream

INSTRUCTIONS
Base
Crush 5 Tim Tams using a stick blender, food processor, or a rolling pin with the biscuits in a zip lock bag. Save 1 tablespoon of the crumbs for garnishing later.
Mix the remaining crumbs with butter in a small bowl.
Press this mixture into the base of a 7" x 4" x 2" dessert box or a glass container. You can repurpose a Ferrero Rocher box for this.
Filling
In a separate bowl, blend cream cheese and powdered sugar until fully combined.
Crush an additional 5 Tim Tams. Mix these with warm milk to create a slurry.
Combine the slurry and vanilla extract with the cream cheese mixture. Mix thoroughly, scraping the sides and bottom of the bowl with a silicone spatula.
Add heavy cream to the mixture and blend until thick and well-combined.
Fold in the reserved Tim Tam crumbs until evenly distributed.
Pour this filling over the base in the dessert box, pressing down gently to fill corners and smoothing the top with a bench scraper.
Refrigerate the box while preparing the topping.
Topping
In a bowl, combine whipping cream, powdered sugar, vanilla extract, and chocolate sauce. Whip until stiff peaks form.
Transfer the whipped cream into a 14” pastry bag fitted with a 1M piping tip.
Pipe a wave pattern diagonally across the top of the dessert.
Sprinkle the reserved Tim Tam crumbs over the dessert for garnish.
NOTES
If Tim Tams are not available, you can substitute them with similar chocolate-coated biscuits like Penguin biscuits (in the UK) or the closest American counterpart which would likely be Trader Joe’s Aussie-Style Chocolate Crème Sandwich Cookies.Ensure your cream cheese is at room temperature before blending for a smoother consistency.To warm the milk, 10 seconds in the microwave should be plenty.For a firmer base, chill the base layer in the fridge for about 10-15 minutes before adding the filling.For a more decorative touch, drizzle additional chocolate sauce over the top after adding the whipped cream.Let the dessert set in the fridge for at least 1-2 hours before serving to allow the flavors to meld together.
