INGREDIENTS
Base
100g(3 ½oz)dark chocolate
50g(⅕cups)heavy cream
¾cup(¾cup)Rice Krispiesor rice bubbles
Filling
150g(5 2/7oz)dark chocolate
100g(3/7cups)heavy cream
Garnish
1tablespoon(1tablespoon)dark chocolatemelted
INSTRUCTIONS
Base
In a saucepan, bring the heavy cream to a boil. Remove from heat.
Add the chocolate to the hot cream. Stir until the chocolate is fully melted and the mixture is smooth.
Fold in the Rice Krispies until they are completely coated.
Press this mixture into the base of a 6” heart mousse ring or 6" heart cake lined. If using a bottomless mould, place it on a sheet of parchment paper.
Filling
Boil the heavy cream and then take it off the heat immediately.
Add the dark chocolate to the hot cream and stir well until the chocolate is fully melted and the mixture is glossy and smooth with no lumps.
Pour this chocolate filling over the prepared base.
Refrigerate for 4-6 hours, or preferably overnight.
Unmoulding
To release the truffle cake, wrap a cloth dipped in warm water around the sides of the heart ring or cake tin.
Carefully transfer the cake onto a serving plate.

For a personalized touch, pipe a blob of chocolate on one side of the cake. Gently stamp it with a frozen wax seal stamp to add a chocolate logo or the initial of your loved one.
