Berry Mousse

250 g (9 oz) cream cheese
¾ cup (¾ cup) powdered sugar
1⅔ cups (1⅔ cups) heavy cream
2 teaspoon (2 teaspoon) vanilla extract
2 cups (2 cups) mixed berries fresh or thawed frozen

Crumb Base

100 g (3.5 oz) cookies any cookie you like
2 tablespoon (2 tablespoon) butter melted

Garnishes

⅓ cup (⅓ cup) chocolate melted
extra berries

INSTRUCTIONS

Berry Mousse

Optionally halve large berries.
In a bowl, mix cream cheese and powdered sugar until smooth.
Add heavy cream and vanilla extract. Beat until thick.
Gently fold in mixed berries. Leave some white streaks visible.

Crumb Base

Process cookies in a blender or food processor until they form fine crumbs.
Add melted butter. Blend again until combined.

Assembly

Distribute the cookie base among 6 glasses.
Spoon the berry mousse over the base.
Refrigerate while you prepare the chocolate shards.

Chocolate Shards

Pour melted chocolate between two parchment papers.
Use a rolling pin to smooth the chocolate into a thin layer.
Roll the parchment around a rolling pin and secure with an elastic band.
Chill for 20 minutes until firm.
Remove the elastic and unroll. Break the chocolate into shards.

Garnish

Sprinkle the chocolate shards evenly over the parfaits.
Top each parfait with extra berries.

NOTES

Try using graham crackers or biscotti for a unique cookie base.
Let your cream cheese soften at room temperature before mixing.
Frozen berries are convenient and available all year round. They work perfectly in this recipe.
Store leftover chocolate shards in an airtight container for up to two months.
