INGREDIENTS
2cups(2cups)mangofresh or frozen (thawed), diced
1cup(1cup)Greek yoghurtfull fat, plain
1teaspoon(1teaspoon)vanillapaste or extract
INSTRUCTIONS
Prepare Ingredients: If using frozen mango, thaw it first. Dice the mango into small pieces.
Blend: Place the diced mango, Greek yoghurt, and vanilla bean paste or extract into the bowl of a stick blender or food processor. Blend until smooth.
Fill Moulds: Spoon the mixture into silicone popsicle moulds or small plastic cups. Insert popsicle sticks.
Freeze: Place the moulds or cups on a tray for easy transportation to the freezer. Freeze overnight.
Remove Popsicles: Remove the popsicles from the moulds or cups. If using plastic cups, quickly dip them in hot water to make it easier to remove the popsicles.
Store: Place the popsicles in an airtight container and return them to the freezer until ready to serve. Consume within two weeks for the best texture.
NOTES
Use ripe mangoes for the sweetest flavor.Silicone moulds make removal easier.If you like a chunkier texture, blend only half the mango and stir in the rest.Add a tablespoon of honey if you prefer a sweeter popsicle.Experiment with other fruits like berries for different flavors.
