INGREDIENTS
600ml(2 ½cups)heavy cream
395g(14oz)sweetened condensed milk
395g(14oz)dulce de leche
2tablespoon(2tablespoon)milk powder
8(8)chocolate cookies
INSTRUCTIONS
Roughly chop the chocolate cookies and set them aside.
In a large mixing bowl, combine the heavy cream, sweetened condensed milk, milk powder, and half of the dulce de leche. Start mixing at medium speed, then increase to high. Continue mixing until the mixture thickens and the volume increases by one-third.
Gently fold the chopped chocolate cookies into the mixture using a silicone spatula, ensuring even distribution.
Place your large silicone Lego mould on a tray (for easy movement) and fill it with the ice cream mixture.
Drizzle the remaining dulce de leche over the top of the ice cream. Swirl it gently into the ice cream. If the dulce de leche is too thick, microwave it for 20 seconds to loosen, then stir and drizzle.
Use any leftover ice cream to fill large silicone Lego block moulds, continuing the theme.
If you don't have a large silicone Lego mould, make portioned ice cream cups and decorate them with Lego stickers or labels to maintain the theme.
Freeze the ice cream overnight.
When ready to serve, release the ice cream from the mould and present it on a large platter. Optionally, serve with an extra drizzle of caramel.
