600ml(2 ½cups)heavy cream
395g(14oz)sweetened condensed milk
2teaspoon(2teaspoon)vanilla extract
¾cup(¾cup)dark chocolate
½cup(½cup)heavy cream
INSTRUCTIONS
Prepare Tray: Line a rectangular baking tray with parchment paper. Choose a tray that fits the size of your hot cross buns snugly.
Chop Cookies: Coarsely chop the chocolate chip cookies into a mix of small and large chunks.
Prepare Buns: Take a six-pack of hot cross buns (chocolate chip or any variety) and slice each in half horizontally. Place the bottom halves in the lined baking tray.
Make Ice Cream: In a mixing bowl, combine heavy cream, sweetened condensed milk, and vanilla extract. Start mixing on medium speed with a hand mixer, gradually increasing to high until the mixture thickens and increases in volume by at least a third.
Add Cookies to Ice Cream: Fold the chopped cookies into the ice cream mixture using a silicone spatula until evenly distributed.
Assemble Sandwich Base: Pour the ice cream mixture over the hot cross bun halves in the tray. Smooth the top with a spatula. Cover with the top halves of the buns.
Freeze: Cover the tray with plastic wrap and freeze overnight until set.
Cut Sandwiches: Let the tray sit for 10 minutes on a wooden chopping board, then cut into six servings using the buns as a guide.
