130g(1 ⅙cups)chocolate cookies
50g(⅕cups)butterunsalted and melted
Coffee Mousse
250g(1cups)cream cheese
½cup(½cup)sugar
2teaspoon(2teaspoon)vanilla extract
1(1)coffee sachetcappuccino flavor
400ml(1 ⅔cups)heavy cream

INSTRUCTIONS
Base
Crush the chocolate cookies into fine crumbs. You can use a stick blender or place the cookies in a zip lock bag and roll over them with a wooden rolling pin.
If using, mix the melted butter with the cookie crumbs until well combined. This will be the base of your dessert cups.
Coffee Mousse
In a mixing bowl, combine the cream cheese, sugar, and vanilla extract. Use a hand mixer to blend until the mixture is smooth and well combined.
Add 1-2 sachets of instant coffee (depending on how strong you want the coffee flavor) to the mixture. Blend again until the coffee is fully incorporated.
Pour the heavy cream into the bowl with the cream cheese mixture. Continue to mix until the mixture is well combined and has thickened into a mousse consistency.
Assembly
Divide the cookie crumb mixture evenly among your dessert cups. Avoid pressing the crumbs down too firmly; a looser base will make it easier to scoop out when eating.
Fill an 18 inch piping bag with the coffee mousse. Pipe the mousse into each cup, going beyond the top rim to create a domed or mound effect. This resembles the froth on top of a cappuccino.
For the final touch, lightly dust the tops of the dessert cups with cocoa powder. This adds a beautiful finish and a hint of chocolate flavor.
Place the dessert cups in the refrigerator. Chill until they are well set before serving.
