INGREDIENTS

Brownie

200 g (7 oz) butter unsalted and melted
150 g (¾ cups) white sugar
150 g (¾ cups) brown sugar
2 teaspoon (2 teaspoon) vanilla
60 ml (¼ cups) milk
4 (4) eggs large
75 g (¾ cups) cocoa powder
95 g (¾ cups) all-purpose flour
½ teaspoon (½ teaspoon) instant coffee granules optional

Brigadeiro Topping

395 g (14 oz) sweetened condensed milk
75 g (⅔ cups) cocoa powder
250 ml (8.5 floz) heavy cream
1 teaspoon (1 teaspoon) vanilla optional
2 tablespoon (2 tablespoon) butter unsalted

INSTRUCTIONS

Brownie
Preheat the oven to 180°C (356°F). Grease and line a 9” square pan (or 8” square pan for taller brownies).
In a mixing bowl, combine melted butter, white sugar, and brown sugar. Mix well with a hand whisk.
Add vanilla extract and milk. Mix until well combined.
Add the eggs one at a time, whisking well after each addition.
Sift cocoa powder and flour over the wet ingredients. Add instant coffee granules (if using). Whisk until the batter is thick and glossy.
Pour the batter into the prepared pan. Bake for 35 minutes, checking after 30 minutes.
Cool in the pan on a wire cooling rack for 10 minutes, then remove from the pan and cool completely on the rack.

Brigadeiro Topping

In a saucepan, combine sweetened condensed milk, cocoa powder, heavy cream, and vanilla extract. Mix well with a hand whisk.
Add butter and place the saucepan over medium heat. Stir continuously until the mixture thickens and begins to pull away from the bottom of the pan.
Pour the mixture into a bowl, cover the surface with cling film, and let cool to room temperature.

Assembly

Trim the brownies to fit snugly into two dessert boxes or a 9” square glass container.
Place the room-temperature brigadeiro into a piping bag fitted with a plain piping tip. Pipe diagonally across the surface of the brownies.
Garnish with chocolate sprinkles and serve.

NOTES

For a richer flavor, use high-quality cocoa powder and chocolate.
If you prefer a firmer texture, chill the dessert before serving.
Use a serrated knife to trim the brownies for a cleaner cut.
Experiment with different sprinkles or toppings for added variety.
